Yummy Cupcakes for My Husband's Birthday
This is not going to be a very long post today. This is also not going to be a recipe post but I really wanted to share these cupcakes with you. They were easy and yummy and I will tell you what I used to make them. They were super easy and quick to make. I just love expirimenting with my cupcakes.
My Husband recently had a b-day and I wanted to make something special for him but I couldn't decide what to make for him since he really doesn't like cake; which made it a bit difficult to decide on what to make. I wasn't sure if he would like cookies, or a big gooey cinnamon roll, or if cupcakes would be good enough. So, finally, I talked to him about it and he said that lemon cupcakes would be good. But I didn't want to do just plain lemon cupcakes. I decided to make a vanilla cupcake with lemon curd as a filling and I swirled blue and white buttercream frosting on top and added some silver sprinkles.
In the end they were really good. I did give some to our neighbor and friends and they enjoyed them a lot. I know this flavor combination has been done before but it was a first for me and it was also a lot of fun. I haven't done this in a while and it felt good to bake something for somebody else. Chocolate Cookies topped with Mint Flavored Candy
First, before I get to the recipe I have to tell you something that I am so excited about. Today I got a stove top espresso maker, and I am so excited about it. Now I can make my own vanilla lattes. Now, some of you are probably thinking that it's just coffee. But it's not, it's so much more. I don't have to worry about spending five dollars on a cup of specialty coffee anymore. I can just walk into the kitchen and make it myself. Now, I haven't had the chance to make one yet, but when I do I will let you all know how it turns out. Also, if you have any tips on how to make a great cup of coffee let me know. I would love to hear them. Now, on to the cookies.
This recipe is really easy. On this one, like many others, I just used what I had on hand. I used a box cookie mix but I bet the cookies would be so much better from scratch. So, here they are; I hope you all like them.
Ingrediants:
1 box chocolate cookie mix
1 egg
1 stick butter
half a bag of candy green candy coating
creme de menthe candy flavoring oil
sprinkles
Insructions:
1. Mix and bake the cookies as directed on the box.
2. While cookies cool melt candy coating in a microwave save bowl just like you have done before.
3. When the coating is melted add a few drops of the candy flavoring and stir well. Remember a little goes a long way.
4. Spread the candy over the cookies with a spoon or an off set spatula and immidiately add sprinkles on top before they dry.
That's it! Yummy Mint Chocolate Cookies. I hope you enjoy them. Happy St. Patrick's Day!

Cherry Truffles Topped with Shredded Coconut
Hi everyone. I'm sorry this is so late, but it's better late than never. This is the yummy Valentine's day post that I was going but I got sick and didn't have a chance to post it until now. These truffles have a great cherry flavor with a little bit of coconut. I hope you enjoy it.
Ingrediants:
Half a bag of red color white chocoate candy discs
cherry candy flavoring oil
powdered sugar
milk
shredded coconut
Instructions:
1. Melt candy discs in a microwaveable bowl in 30 second intervals until smooth. Stirring after each addition.
2. Fill truffle molds and lightly tap on counter top to get all the air bubbles out. Refigerate for 30 minutes or until set.
3. Tap the mold onto a cookie sheet lined with wax paper until all the truffles are out of the mold.
4. Mix milk and powdered sugar in a small bowl to make icing. You will want it kind of thick because this will be the glue for the shredded coconut.
5. Top each truffle with the icing and then a little of the shredded coconut and let it set until dry. Keep in an air tight container. Should make about 28 truffles.

What I've been up to
Hello all, I am so sorry about my absence, but I am still here and I will be doing some more posts. All is well and everything is good. I signed up to do chocolate tasting parties and a lot of my time has been going to that and to my family. I haven't done much baking lately, but I do plan on making some cookies tomorrow and hopefully I can get a new post up for you all soon. For more info on what I do go ahead and email me and I will get back to you as soon as I can. I am trying to keep my blog seperate since it is just a hobby. Have a great day everyone and thank you so much for understanding. I am going to try my best to start posting more again.

My Sugar Cookies Decorated with Royal Icing for the First time
I wanted to do one more post; mainly because I wanted to share what the sugar cookies looked like after they were finished. I think they turned out pretty good for the first time, and everyone enjoyed them very much. So, here they are I hope you enjoy them. They were a lot of fun to make. This is my last post for 2011.
